Sage is picked by hand in the pristine nature of Dalmatia, which is reputed to be the world best sage site. The sight is beautiful especially in May, when entire fields bloom in pale purple.
With sage the saying “less is more” certainly hold true. Dalmatian wild-growing sage is a shallow shrub, not exceeding 30 cm in height. Leaves are grayish and relatively small. Sage grown in our Herb garden grows up to 60 cm in height, its leaves are green and very large. However, the aroma and the power of hydrolat in this case are not proportional to the size. Tiny plants exposed to the Dalmatian sun, typical wind and salty air gather a tremendous survival power which is consequently reflected in the quality of hydrolat.
Sage hydrolat is one of the strongest. And the taste of Dalmatian hydrolat is particularly strong, primal, somewhere between bitter and refreshing. Therefore, it is not uncommon to dilute it with water when used orally.
